Cooking can be fun.  You can be creative and experiment with foods that you enjoy.  I like to keep things simple and have included some of my favorite recipes and cooking tips for you to try.

Breakfast Casserole

Servings:  2                      Ready In:  25-30 mins.

This can be made the day before and placed in the refrigerator until ready to bake, or it can be made prior to taking your morning shower and when you are done, it will be ready to pull out of the oven.  Any type of meat can be used in place of the bacon or you can replace the meat with an equal amount of vegetables such as peppers or mushrooms.  Use your imagination and enjoy your breakfast!

Ingredients

  • 1 slice bread (any kind)
  • 3 eggs
  • 1/4 cup milk
  • 1/4 cup shredded cheese 
  • 1/2 cup cooked bacon (crumbled)
  • salt and pepper to taste

Place the bread in the bottom of a greased (sprayed or wiped with oil, butter or margarine), 8×8 in. baking dish.  Mix the remaining ingredients and pour over bread. Bake for 25-30 mins. at 350 degrees or until eggs are set and the top is browned.

Keto diet friendly – omit the bread and just add extra meat or vegetables
Vegetarian – omit meat and add vegetables or vegetable protein
Clean out the fridge – use any leftover cooked meat for the meat and any leftover pasta for the bread
